I’m not familiar with what parts come with Walt’s kit, but see what hand plates are included.
If only one set is included, build that version 😜
If both ANH and ESB hand plates are included, decide which version you prefer and build that.

We are kind of sparse Upstate, so you're more likely to get useful help here, but there might be a couple unbuilt and unwanted Stormtrooper kits floating around the Garrison.

Like @Tilheyra, go by the screen references first, but if an onscreen trooper looks like Figure #2, for example - why not use it as a guide of sorts?

Going by just these pictures, it looks like the kama is only two pieces, left and right.
The left sits over the right, and is pleated/folded once from the waistline to the hip joint.
Alright, I need to finish my ROTK, FOTK TFA, and FOTK TLJ, and then maybe toss in an extra ab, thermal detonator, and holster for a Kenobi TK - I'm doing my part to keep our numbers up!
