I can't comment on the ATA/AP differences. I do recommend if you want EIB or Centurion that you start your build with that in mind. It's far easier to incorporate those requirements up front than to try to upgrade a finished build.
I"m 6'3" and have TM armor. It's great for taller people. My guess is that you'll be able to work with the ANOVOS kit. You can get creative with the gaps at your elbows and knees and get it to work. The biggest challenge will be in the torso and making that long enough. There are things you should be able to do there as well. It's hard to tell until you see the final kit.

I just saw that I'm #172. That's cool. My TK ID is from one of the planes I rented to get my private pilot license, N22237, a Cessna 172.
I'd recommend taking a couple of scrap pieces and make some ABS paste. Make some cuts and holes and dents in another piece of scrap and use the paste to fix it. Once you see that the plastic can be fixed, you'll be a lot more confident!
