What are the different color of pauldrons offered and what does each color represent?

So far as I know there are 3 colours and ranks:

 

orange - captain

 

white - sergeant

 

black - private

Well, in ret con they have meaning.  Back in '77 it was more like "OK, I need 2 oranges for this shot along with a black and 3 whites.  No, move the other orange in front so it looks more striking".  "What do they mean?  Who cares, it's a sci fi flick." 

 

Funny that since then, movies really try to explain things more.  Back then it was more "that looks cool, use it in a shot".

While watching Star Wars Rebels, there are Stormtroopers with black pauldrons that are General/Moff Tarkin's personal Stormtrooper security. And I'm pretty sure that he doesn't want to be surrounded by low grade Privates

Lots of different colors mean different things at different points in SW history. Orange, white and black are [some of] the OT (canon) Imperial Navy ranks and mean what they've said above. There's also all kinds of EU guys in armor or cloth uniforms with pauldrons, most likely picked for aesthetic reasons by the artist(s) vs the individual soldiers' rank. Lucas would hate to see anyone but sandies wearing them but who cares, right?
