Back in '77 it was more like "OK, I need 2 oranges for this shot along with a black and 3 whites. No, move the other orange in front so it looks more striking". "What do they mean? Who cares, it's a sci fi flick." Funny that since then, movies really try to explain things more. Orange, white and black are [some of] the OT (canon) Imperial Navy ranks and mean what they've said above. There's also all kinds of EU guys in armor or cloth uniforms with pauldrons, most likely picked for aesthetic reasons by the artist(s) vs the individual soldiers' rank.
