I've seen some on The Replica Prop Forum. The Custom Saber Shop has parts for both static and active versions. The Parts of Star Wars has a nice write-up about the screen used version as well as a template for grip placement. The FX-sabers are really cool with built in crystal chambers.
I've got a dueling one on my workbench I need to finish one of these days.
Are you doing a static or active version? The static prop is pretty straight forward with grip material, D-ring belt hook and some calculator display "bubbles" added to the flash. The active model that lights up and has sounds, effects, etc.. can get pretty elaborate.
