Definitely from the top and as per the picture you csn use painters tap to trace out the correct curve and use this as a guide when trimming.
But as with all trimming best to start off small and take off more as you go.

I second this advise, I reached out to my local outpost at the start of my first build. Having local support accompanied with advice from the forums and you'll be a Stormtrooper in no time.Hello and welcome to the FISD. Something I often recommend, is to get in contact with your local Garrison. You currently have no location info in your profile, but if you let us know where you are living, we can help. Meeting these people will help you in so many ways and seeing armors of different makers in person, really trains your eyes for the small variations and details.

Hi Manuel, you've found the right place to start and for your info the base build of a Shock Trooper is a Return of the Jedi TK so that is always a good thread to check out as well.
I'd start with reviewing the CRL, link below and check out other builders threads.

Hi Future Trooper, the best place to start is in the New Recruits section of the forum. It has lots of useful info to answer many of the questions you'll have, including where to purchase your armour from.
Start with the above link and let us know if you have any further questions.
The key to building a great set of armour is research, lot of research.
