NE helmet assembly help

I have seen that they changed the ears. So there is no more gap like before.

even with the new ears - there will be a step off right where the back meets the face plate. 

to minimize this the faceplate is going to need to be trimmed - this trimming is what I am seeking some guidance on.

Even with new longer ears, that will still won't be covered.

Perhaps it will be covered with the brow trim, but I would like it to sit flush.

I think you will find it's a combination of the trim as well as the ear covering most of the gap. Ears do cover a great deal of the sides, so I would look at fitting them and see how you go. If you still have a gap you could put a strip of abs in between the top and side, that will bring that section inwards more, good luck
